I would like to use it specifically for the sync between machines, because ridicolous terminal commands like with find, grep or checking/comparing used storage volumes is abysmal to remember. I also set up my own server which worked quite well, I just wish the “client” installation as a proper debian package instead of this stupid shell script.

Don’t use github/gitlab for small private repositories! use codeberg.org if you are not a developer. If you are in need for a big more jazz and looking at self-hosting go for forgejo.

But dare you something doesn’t work as expected under plasma. Trying to figure out what causes the issue is a daunting task. Also you mentioned windows rules much, did you mean you prefer windows rules from plasma to tiling? Because setting up windows rules for all your applications is AT LEAST as bothersome as it is in any of the twms I tried/use (i3wm, river) or WMs like labwc.

I think their documentation is pretty solid, for everything else the reddit/internet searches can solve it. But as with EVERY DISTRO on this planet, the archwiki can be applied! You just need to know what are the differences from void to arch. (no systemd for example)
