So i definitely prefer using a knife but my wife did get me a mandolin and the thing I’ll say is i do love the speed and consistency. If i want something looking real nice i use the mandolin so everything is evenly cut and people think i have master level knife skills until i tell them i ‘cheated’. I do think it’s interesting how many people will notice and comment on the uniformity of things being diced
Love my chef knife. Was talking with a friend who got into forging and told me if i ever visited he could show me how to make my own 👀 for some reason using a chefs knife i actually made really speaks to me. If only he didn’t live so far away lol

I also love our rice cooker but one time i pressed brown rice instead of white rice button and our sushi rice ended up not cooking right. I had made sushi for the extended family and everyone was nice and said it tasted fine but i think they were just being nice cuz that sushi rice was hard when you bit into it lol
The reminds me the other month i volunteered for a group that wanted a custom app built. We went through the requirements, i build it, i demo it, and they ask why it’s doing XYZ. I tell them the was what they wanted. Turns out they actually wanted some completely different logic that was a near total re-write. If i had just been contracting i would’ve had this kind of stuff built into the pricing/ conditions but for volunteer work it kind of sucked to waste hours on functionality i had to competely redo. And looking back it wasn’t like i didn’t ask the right questions.

Another vote for pressure cooker. It can pressure cook (obviously), slow cook, sauté, and cook rice. I’m sure theres more! But basically combines a lot of kitchen appliances into one. We do use a huge slow cooker for when we double recipes but if i had to just pick one appliance and get rid of the rest then id be picking the pressure cooker for versatility.
Ive considered just doing VWG because the wash method makes a bomb go off in our kitchen. I’ve never really done the cost calculation but if that’s all the difference then that probably is worth it
My tip would be to learn to cook. Go to the library and find some vegan cookbooks if they have them. Otherwise just look at recipes online. Cooking gets easier and more enjoyable over time, it’s probably healthier and cheaper than any of the crap you can buy pre-made, and you can experiment to make food just the way you like it.
Anyway, last week i mentioned a vegan friendsgiving. It went really well. Honestly it’s been way too long since I’ve been able to just eat anything being served. Turns out not a lot of people wanted to try my stew because there was so much food and it was a bit awkward to get a bowl for my stew. Oh well, just meant i had leftovers 😅
Very much relate to the scared dog and not being able to sleep. The dog we said goodbye to last week (old age) was like that. Hope things go relatively well with storms. As far as concentrating one thing that helped me was starting using a pomodoro timer. Basically try to do distraction free focusing for 25 minutes, then take 5 minute break. After a few intervals you get a longer break. It was hard actually staying focused for 25 minutes with things out of my control (dog), but it has helped me from getting off my phone and such. Still need to get better at consistently doing it though

Yeah! A lot of the time we are hosting our non vegan friends and we make them all eat vegan food. But tomorrow some of our vegan friends are hosting and they are much more connected with other local vegans. Should be good to reconnect with some people from last year and then meet some new ones.
Before covid we did have success with hosting vegan meetup groups but haven’t gotten back into the yet

And yeah if you do want to homecook seitan it will definitely be cheaper. If you make it from scratch you wash starch out of flour to get the vital wheat gluten. That process is a bit of a mess but that’s the cheapest way to do it. Otherwise they do sell vital wheat gluten but that’s more expensive for the convenience.
I had similar thoughts for the heroes.
And hopefully the dinner plate is good. We did that last year from a local place and it was delicious. But this year i missed the order list since they only post on Facebook which i don’t have. Oh well!

I also don’t really have any real life heroes. Though since it’s been on my mind lately: anyone willing to fight for social justice or animal welfare. Protest/civil disobedience/steal neglected animals/etc. They’re the real ones. I hate complacency and people’s tendency to just roll over and accept shit. I’m in that group more than i would care to admit.
Anyway, got invited to a friendsgiving this year. All vegan. Very excited. I’ll be bringing a Jamaican red bean stew which i think has always been a hit
Nice! Right now cabinet space is at a premium but someday i hope to have the time and energy to learn how to build some extra cabinets (or money to pay someone to do it lol). Then i can consider such a magical device!
