There aren’t a ton of really good women in earlier WWE, but I highly recommend watching AEW for women with fun stories right now. The Timeless Toni Storm storyline is amazing, and you can find a video on YouTube.
For my money, the best lore and wild character work was in Lucha Underground. I don’t know where to watch it right now, but it has dragons, zombies, moth men, phoenixes, and a crazy violent authority figure who runs the ring like a temple. It’s incredible.
